Elizabeth Willard grew up surrounded by Italian Irish cuisine, making food central to her life. Over 17 years ago, she left her corporate career to start Lucia’s, a personal chef company named after her great-grandmother who taught her the value of quality ingredients.

In 2017, after being diagnosed with Hashimoto’s Thyroiditis, Liz changed her diet—which eliminated gluten, dairy, soy, and other sensitivities—resulting in remarkable improvements. Inspired to help others, she founded The Pickled Beet to offer nourishing, delicious meals tailored to individual needs.
